I just tried to print a board on my color printer, in the Preview I can set the Print colors but they don't change. I can change the 'board' colors but that does not change the colors in the Preview or when the board is printed.

SMD pads have the color of layer they are placed on. If you want to change color of SMD pads on print preview and printer output you need to change color of layer in layer setup. The same rule is for traces.
Since it appears you're just selecting a single color from what appears to be a solid backdrop, I'd advise you to step it up and use Select/Color Range. After that, you'll need to use the dropper to choose the color here you want. Grey, in this situation. Anything that is grey should be highlighted (and do so in a manner much better than general masking). If the selected area is insufficient, you can easily increase or decrease it.
