Use pad instead of moumting hole. But if you want no shape on top layer, switch to top layer, right click on the pad and select "Hide pad ring in layer".
This works in PCB Layout only.

You can create component with two terminal in Component editor within one minute. However if you like component from Schematic_3, right click on it and select "Save to library". Then you will find the component in specified library. Jumper is available in "Disc_Sch" library, but it has not attached ...

I suppose, you have a schematic with already placed potentiometer in it. Right click on the potentiometer and select "Attached pattern". In appeared window, click on Add button above library list and choose "_general.lib" from folder "C:\Program Files\DipTrace\Lib\" or other folder depending on wher...

Currently, it is not possible to add vias to pattern. You can only place multiple static vias over large thermal pad in PCB Layout. Of course, you should connect these vias to the same net as the pad to avoid DRC errors.
We will consider adding vias to pattern for one of future versions.

The potentiometer from standard library has not attached pattern. You should attach pattern to the component in Schematic program before converting it to PCB.
Please find some potentiometer's patterns in "GENERAL" pattern library. For example, POT1S, POT2T, etc.

Thank you for the file.
Autorouter tries to mitter corners where it is possible. However, if there is short line from pad to turning point, autorouter can't mitter corner. You can easy fix it manually.

You can change pad width and height before changing pad shape to polygon.
If you already have polygonal pad, you should click on Points button and define polygon points by coordinates.

Just add a text on copper layers. Choose "Signal/ Plane" from drop-down box on drawing panel, ensure that Top or Bottom layer was selected on another box named "Current Signal/Plane layer", select "Place text" tool and place it where you want.

Please check option "View/ Flip text automatically" from main menu. It is probably unselected now, therefore select it.
