How is it possible to select a "keepout layer" on my pcb, so that I can force the copper pour utility
not to pour copper on this selected "keepout layer".

What you can do is to define more than one copper pour areas.

Define the areas you want to have the pour.

Select "Route keepout" from drop-down box on drawing panel, then select a shape type from the same panel and draw it on design area. Then do not forget to update copper pour(s).
