Your text was probably put in a layer other than "Top Silk" or "Bottom Silk." I think by default they end up the Top Assy layer. Go to File->Export->Gerber and preview the Top Silk layer. Do you see your text there, or do you only see your reference designators?

Remember to preview your gerbers before you submit to manufacturing. Most board manufacturers are almost completely automated - unless something goes wrong, nobody will even look at the gerber files.

To print text objects you need to use Silkscreen, normally used on the component side to identify test points, PCB part numbers, warning symbols, company logos and manufacturer marks. I got PCB designs with Silkscreen done for couple of product from Technotronix, providing latest PCB design features with good product quality. http://www.technotronix.us/pcb_fabrication.html

You can use silk screen to print object on board. Silk screen normally used on the component side to identify test points, company logos, PCB part numbers, manufacturer marks and warning symbols.

For my PCB prototyping I prefer PCB manufacturer who support PCB board layout with silk screen for text objects. You can check with them may it will help you.
